The menu includes dishes arranged with ayu fish, cucumber, eel, and other ingredients, all of which are excellent dishes to be enjoyed during the current season. The set includes eight a la carte dishes and wine pairings (three wines by the glass).<\/p>\n<p>\n\u25a0Summer Course Menu Details<br \/>\n(1) 3 appetizers<br \/>\nAmitabha Butter<br \/>\nShrimp tsukudani and caramelized nuts<br \/>\nA true taste of Doraku.<\/p>\n<p>(2) Hokkaido-style tsukudani of Nishin<br \/>\nHime-nishin tsukudani with sauerkraut and sour cream. Recommended with white wine.<\/p>\n<p>(3) Tartine with ayu fish and cucumber<br \/>\nCut up ayu fish in shape and served canap\u00e9 style. The head and tail of the ayu fish are mixed with mustard for a secret taste. Recommended with orange wine.<\/p>\n<p>(4) Eel agrodolce<br \/>\nEel tsukudani with chocolate and balsamic. A profound and deep taste. Recommended with red wine.<\/p>\n<p>(5) Cappellini with Sicilian-style grape clams<br \/>\nPasta dish with sansho (Japanese pepper) flavored scallion tsukudani.
