As the name &#8220;shinko&#8221; implies, the term &#8220;shinko&#8221; refers to 4-6 cm long fish that are just four months old. When they grow to 7 to 10 cm in length, they are called &#8220;kohada,&#8221; 13 cm or so are called &#8220;nakazumi,&#8221; and 15 cm or more are called &#8220;konoshiro,&#8221; and as they grow older, they are renamed &#8220;kohada. Shinko are only available from June to August of the year, and are a summer speciality at Edomae sushi restaurants.
