A specialty store that values newness.<\/h2>\n\n<p>Ninben\u2019s hit product is \u201cTsuyu no Moto,\u201d known for its orange label.The 13th successor, Mr. Ihee Takatsu, smiles and says, \u201cMy family always kept a bottle at home, and I grew up with it. Since high school, I often shaved bonito flakes myself.\u201d\u201cTsuyu no Moto used to have sweet and spicy versions, but now they are unified. Recently, the premium \u2018Tsuyu no Moto Gold\u2019 series has become very popular.\u201d<\/p>\n\n<p>While staying true to its core of bonito flakes, Ninben continues creating new products that reflect the times.At the \u201cNinben Nihonbashi Main Store\u201d located in \u201cCOREDO Muromachi 1\u201d (Tokyo, Nihonbashi), you\u2019ll find more than 400 unique products lined up.The store also includes the \u201cNihonbashi Kezuriba,\u201d where bonito flakes are shaved and sold on-site, and the standing bar \u201cNihonbashi Dashiba,\u201d serving bonito broth with a \u201cone soup, one rice\u201d concept.<\/p>\n\n<p>\u201cOriginally, this was supposed to be a temporary store before relocation.Since it was only \u2018temporary,\u2019 we wanted to make it experiential \u2014 a place where visitors could taste freshly shaved bonito and fresh broth.\u201cIt was an experiment,\u201d recalls Mr. Takatsu about the 2010 opening, but once it opened, it became a huge success.As a result, this store became the official main store and remains so today.Incidentally, the \u201cKatsuobushi Broth\u201d at Nihonbashi Dashiba (100 yen per cup) exceeded 980,000 cups in total sales by 2021, showing its popularity.\u201cAdopting new things is the secret that allowed Ninben to survive for 320 years.Thinking back, we adopted new payment styles like \u2018cash, no discounts,\u2019 and we were one of the first to handle \u2018Honkare Katsuobushi,\u2019 earning strong customer support.Tradition is important, but it is also vital that we ourselves feel excited as we adopt new ideas.\u201d<\/p>\n\n<p>Ninben is now expanding in overseas markets.\u201cCompared to 2015, the export volume has doubled.Bonito flakes are truly a pride of Japan.We hope to pass this on to future late Edo period, when the technique of repeatedly adding mold to age bonito \u2014 \u201cHonkare Katsuobushi\u201d \u2014 emerged, Ninben actively adopted it and gained wide popularity.Despite
