There are various theories as to the meaning of the word, but it means pure and unadulterated. In the case of Japanese sake, the term “Nama-ichibon” is defined in the Sake Manufacturing Process Quality Labeling Standard as “pure rice sake brewed only at a single production site. In the past, the term “Nada no Nama no Nama Ippon” was used to describe excellent sake. Junmai sake made at another company’s brewery or mixed with junmai sake made at another company cannot be labeled as nama-ichibon.
