Sushi rice is rolled on the side of a sushi rice ball and topped with sushi rice. Gunkan-maki is made when using fragile ingredients such as sea urchin, salmon roe, crab miso, and negitoro. The name “gunkanmaki” comes from its pitch-black shape, which resembles a warship when viewed from the side. The size of the nori used in gunkanmaki is usually a full-size nori cut into long, thin strips exactly one-sixth the size of the original nori. Gunkanmaki originated in Ginza Kyubei. Around 1941, a regular customer brought sea urchins from Hokkaido to the restaurant, and the first owner made sushi with them, which is said to have been the first gunkanmaki.
