As the word implies, it refers to newly created sake. However, its definition is ambiguous and various meanings exist. Generally speaking, sake produced and shipped during the sake brewing year from July 1 to June 30 of the following year is called “shinshu. In the manufacturing industry, the period from July 1 to June 30 of the following year is referred to as the “production year,” also known as the “Brewer Year (BY). Sake made from new rice harvested during the production year is sometimes called shinzake. Sake is often brewed with new rice harvested in the fall and shipped between November and March of the following year, so this term is widely used in the current context. It is characterized by its fresh and lush flavor.
