Sake with a slightly cloudy color, mixed with the tailings that have settled to the bottom of the tank. There are two types of sake: one in which only a small amount of ooze is mixed in, and the other in which ooze is mixed in thoroughly. Because the otsuri contains a large amount of amino acids and other flavor components, many sake has a richer flavor than most other sake. Some ogara-mi (unpasteurized sake) has a fresh taste with a slight effervescence. It is also called “kasumi-zake.
