Sake made from rice polished to less than 60% and to which brewing alcohol has been added. Ginjo-shu uses a process called “ginjo-zukuri,” in which well-polished rice is fermented at a lower temperature for a longer period of time than usual. It is characterized by a fruity, refreshing taste. Junmai Ginjo does not contain brewing alcohol, so the flavor of the rice can be felt more than in Ginjo-shu, which has a clean, light flavor.
