A dish in which fish, seafood, vegetables, etc. are mashed, strained, and spread with soup stock. Also called “surinagashi soup” or “surinagashi tailored soup,” it is a dish in which the soup is the main ingredient. Ingredients such as shrimp, crab, hamo, chicken, edamame (green soybeans), chestnuts, and tofu are generally grinded and served in a clear soup or miso broth. At ryotei (Japanese-style restaurants) and kappo (Japanese-style kappo restaurant), it is served as a “soup in a bowl” and accompanied by “yakumi (condiments)” such as leeks, mitsuba, myoga, yuzu, and kinome (sprouts of trees) to match the ingredients to be grated.
