A dish in which fish, seafood, vegetables, etc. are mashed, strained, and spread with soup stock. Also called “surinagashi soup” or “surinagashi tailored soup,” it is a dish in which the soup is the main ingredient. Ingredients such as shrimp, crab, hamo, chicken, edamame (green soybeans), chestnuts, and tofu are generally grinded and served in a clear soup or miso broth.
