Duck or chicken meat simmered in soba-tsuyu (buckwheat sauce) and green onions (nanban) are topped with kakesoba (buckwheat noodles) or udon noodles. The name “Nanban” comes from the fact that the Portuguese and Spanish who visited Japan during the Edo period (1603-1867) often ate leeks to maintain health and sterilize their bodies.

In an essay written in the late Edo period (1603-1867), “Ureshu Shoran,” there is a description that the first soba restaurant to serve duck nanban soba was “Sasaya” located in Bakurocho Bridge in Edo (Tokyo).
