Located in the Akigawa River basin, Nakamura Brewery uses pure water drawn from 170 meters underground, filtered through ancient Chichibu rock layers.It is one of the ten sake breweries in Tokyo that continue to preserve tradition.Making use of Akiruno’s cold winters, the brewery produces sake with carefully selected rice.Brewing rice is highly polished, and while many hand-crafted elements such as traditional kettles, koshiki steamers, and futa-koji are retained, modern technologies like fully automatic koji-making machines are also used to brew with care.A key feature of Nakamura Brewery is its use of both Edo-period earthen storehouses and modern, climate-controlled facilities kept below 10°C year-round.While sake is usually brewed in three stages—soe, naka, and tome—Nakamura Brewery adds an extra step known as the four-stage brewing method.
The grounds also include a sake brewing museum displaying traditional tools and materials, housed in a renovated earthen storehouse originally built in Meiji 17 (1884), where visitors can feel the history of the brewery.

History

Since its founding in Bunka 1 (1804), Nakamura Brewery has been producing sake in Akiruno for over 200 years.Centered on the brand “Chiyotsuru,” the brewery produces about 40 varieties of sake.Under the current 18th head, Nakamura Hachiroemon, sakes such as “Chiyotsuru Tokyo Sakagura Tamashii Junmai Genshu” have been created, showing a brewery that preserves tradition while constantly challenging new styles.

Brewed in the severe cold, pasteurized in spring, stored, and matured over summer, this sake is carefully selected and bottled at peak flavor.Made with highly polished brewing rice and exceptional care, this tokubetsu junmai sake highlights the rich taste of rice.Enjoyable chilled or warmed, it pairs well with Japanese cuisine and roasted meats.

Mount Takao Junmai Dry Nama-Chozo Sake

Among the “Seishu Takao-san” served as sacred sake at the prestigious Yakuoin Temple on Mount Takao and at shops along the approach, this is a seasonal limited sake recommended for summer.It has a clean taste with a crisp, refreshing finish.Best enjoyed chilled, it pairs well with richly flavored Japanese dishes such as eel.
