Japanese rice wine

Sake made from rice with a milling ratio of 70% or less, koji rice, and water, with no brewing alcohol added. Among Tokutei Meisho-shu, it is characterized by the umami taste of rice and its deep richness. Tokutei Meisho-shu requires the use of third-grade rice or higher and koji ratio of 15% or higher. Another appeal of junmai sake is that it can be enjoyed at a variety of temperatures. The best temperature range is from room temperature to lukewarm, which is the best for enjoying the most characteristic rice flavor. Since it is made from only rice and water, it is also a perfect match for Japanese, Chinese, Western, and all other types of cuisine.
