Shimbashi Tamakiya] “Tsukudani and Wine Mariage Course” Summer Limited Menu Starts!

A summer-only menu has been added to the popular course menu that began at the end of November 2022, based on the concept of enjoying tsukudani cuisine with wine pairings. The menu includes dishes arranged with ayu fish, cucumber, eel, and other ingredients, all of which are excellent dishes to be enjoyed during the current season. The set includes eight a la carte dishes and wine pairings (three wines by the glass).
■Summer Course Menu Details
(1) 3 appetizers
Amitabha Butter
Shrimp tsukudani and caramelized nuts
A true taste of Doraku.
(2) Hokkaido-style tsukudani of Nishin
Hime-nishin tsukudani with sauerkraut and sour cream. Recommended with white wine.
(3) Tartine with ayu fish and cucumber
Cut up ayu fish in shape and served canapé style. The head and tail of the ayu fish are mixed with mustard for a secret taste. Recommended with orange wine.
(4) Eel agrodolce
Eel tsukudani with chocolate and balsamic. A profound and deep taste. Recommended with red wine.
(5) Cappellini with Sicilian-style grape clams
Pasta dish with sansho (Japanese pepper) flavored scallion tsukudani. Recommended with orange wine or white wine.
(6) Bean and yogurt chantilly with orange flavor
Zazen-mame (black beans) and grape-mame (soybeans) on top of yogurt for dessert.
