A sweet, pink-colored tsukudani or furikake, often used in chirashi sushi and makizushi rolls. The pink color is colored with food coloring. It is made by removing the bones and skin from white fish such as sea bream and cod, breaking them up, adding sake and sugar, and frying them until dry. Denbu” is written in Chinese characters as “fu,” which originally comes from the word “tayu,” meaning coarse or rustic. The name is said to have come from the fact that the high-grade fish is eaten after it is deliberately broken into small pieces.
