It means the ingredients for tamago-yaki (omelet) at sushi restaurants. It can also refer to a raw egg placed on a beef bowl. The name is derived from the phonetic reading of the word “tama” in tamago. The most common type of egg is a sweet, thickly-boiled egg made by adding sugar and shoyu to beaten egg, then combining it with fish or shrimp paste and baking. It used to be said that one could tell the skill of a restaurant’s chef by eating gyoku, with each restaurant displaying its own individuality. Nowadays, some restaurants purchase ready-made gyok from specialty stores.
