Yabu” is a lineage of one of the three Edo-style soba families along with “Sarashina” and “Sunaba”. Yabusoba is characterized by its light green noodles made from buckwheat flour with the sweet peel of the buckwheat seed properly ground into it. Traditionally, the sauce is thicker to match the savory flavor of the noodles.

The original “Tsutaya” was located in Dangozaka, Edo (present-day Tokyo) at the end of the Edo period. There is a theory that the name was changed later to “Yabusoba” because the store had a large garden with thick bamboo thickets, or because the store was located in a place called “Yabushita.
