Kaiseki ryori” is often confused with “kaiseki ryori,” but they are two different things. Kaiseki ryori” is a banquet dish to be enjoyed with sake, while “kaiseki ryori” is a dish served at a tea ceremony before the tea is served, and is said to have been started by Sen no Rikyu. Although there is no strict order in which the dishes are served, one example is the “oshiki,” which consists of rice, soup, and mukozuke (mukozuke with rice, vegetables, and vegetables). One example is “oshiki (rice, soup, mukozuke),” “wanmori (bowls),” “yakimono (grilled dishes),” and “mukozuke (boiled dishes). One example is “oshiki (rice, soup, mukozuke),” “wan mori (bowls),” “yakimono (grilled fish),” followed by “chopstick wash (a small soup),” “hachisun (a side dish of seafood or mountain products),” and “yutou (a hot water bucket). This is followed by “okoge (a type of rice cake with hot water poured over it)” and “konomono”, and concludes with “main sweets and thick tea (wagashi, a type of powdered green tea with a rich flavor)”. After the grilled dishes, a “sake pot” and “strong side dishes” may be served.
