There are two main types of sembe: kawara sembe, which is made by mixing flour with eggs, sugar, water, and other ingredients and baking it; and shio sembe, which is made by kneading rice flour, seasoning it with soy sauce or salt, and baking or frying it. There are various theories about the origin of sembe: some say that Kukai brought it back from China, some say that it was invented by a disciple of Sen no Rikyu, and some say that it originated when a Soka resident named “Osen-san” learned from a traveler and baked leftover dumplings.
