A method of sake brewing derived from the “ikuhashi-zukuri” method. Yamahai-brewing is a sake brewing process that does away with the “yamahoshi” process, which is considered to be one of the most laborious processes in the sake making process. In yamahai brewing, instead of grinding steamed rice, mizu koji, in which koji enzymes are dissolved in water, is used. The idea is to achieve the same effect as “Yamahai” by doing so. It is characterized by moderate acidity, deep flavor, and rich fullness that only a wild sake mother including natural lactic acid bacteria can produce.
