Japanese rice wine

Sake made from white rice with a milling ratio of 70% or less, rice malt, water, and brewers’ alcohol. Honjozo sake has a flavor and richness similar to junmai sake and a lighter, mellower mouthfeel than junmai sake. The amount of brewing alcohol added to balance the flavor is less than 10% of the total weight of the white rice used to make the sake, which is less than the amount used for regular sake. With a taste that is not too sweet, taking advantage of the flavor of the rice, and a refreshing aftertaste, honjozo sake is perfect as an in-between-dinner drink.
