Bodhi yeast mash starter(Bodaimoto)

A type of sake mother used in sake production. It is said to be the oldest sake mother in Japan. Bodai-Hashiroshi is said to be the oldest sake mother in Japan, and was established at Bodaiyama Shoreki-ji Temple in Nara City, Nara Prefecture. Bodai-Hashiro is distinctly different from the sake mothers (Sodai-Hashiro, Yamahai-Hashiro, and Nama-Hashiro) widely used in modern sake brewing, in that lactic acidic water, called Soyashimizu, is prepared in advance and used to brew the sake mother. This enables the sake mother to be quickly grown under acidic conditions. It is said that the lactic acid fermentation technique called “Bodai-Hashiro” became the prototype for the modern-day “Namahashi-zukuri” method.
