The fry of kohada and konoshiro, which are members of the herring family. As the name “shinko” implies, the term “shinko” refers to 4-6 cm long fish that are just four months old. When they grow to 7 to 10 cm in length, they are called “kohada,” 13 cm or so are called “nakazumi,” and 15 cm or more are called “konoshiro,” and as they grow older, they are renamed “kohada. Shinko are only available from June to August of the year, and are a summer speciality at Edomae sushi restaurants. Because of its rarity, it is a high-end fish that commands a high price in the market.
