A thin nori roll with a cucumber core. There are various theories as to the origin of the name “kappamaki,” including that cucumbers are the favorite food of the imaginary creature kappa, that the cross-section of the cucumber looks like a kappa plate, and that it resembles the crest of Suitengu, the headquarters of the kappas. The originator of kappamaki is said to be a sushi restaurant in Osaka, and it is said that the name “kappamaki” spread because the restaurant had the trademark “kiurimaki” (cucumber roll).
