Ginger pickled in sweet vinegar to serve with sushi. It is made by quickly boiling thinly sliced ginger and marinating it in sweet vinegar. The word “gari” is said to have come from the sound of the ginger being chewed with a crunching sound when eaten. Since raw fish is often used in sushi, eating gari has the effect of removing the fishy smell and refreshing one’s palate after eating oily ingredients. Ginger also has a sterilizing effect and prevents food poisoning.
