Based on Buddhist beliefs, it is a cuisine that prohibits the killing of animals and aims to suppress vexations. It does not use animal products such as meat, fish, and eggs, and instead focuses on vegetables, grains, and seaweed. Soy products such as tofu and natto (fermented soybeans) are used as a source of protein. Five kinds of foodstuffs called “five pungent roots” (garlic, onion, leek, chives, and rakkyo) are also not used in cooking as they are known to stimulate vexation. It is served to monks engaged in Buddhist training, and is also commonly eaten at funerals and Buddhist memorial services.
