A nori-maki (seaweed roll) made with red tuna and wasabi (Japanese horseradish). Similarly, a bowl of rice topped with a bowl of tuna and sushi rice is called a “tetsubi-don. Tekka” refers to the reddish color of iron heated to a high temperature, and the name “Tekka-don” is said to have come from the “red and spicy” taste of the Tekka-maki with wasabi added. Another theory is that the word “tetsubi” originated from the fact that these seaweed rolls were often eaten at gambling halls. The name “Tekkaiba” comes from the fact that people who were absorbed in gambling would often pick up a tuna nori-maki with one hand and eat it during the game. However, the former theory is more likely in light of the existence of tekka-don and “tekka-miso,” a spicy red miso paste.
