White rice used to make rice koji. Rice koji is made by attaching koji mold to steamed koji rice and allowing it to propagate. Rice koji converts rice starch into sugar and produces alcohol. Therefore, high-quality rice is used because the quality of koji rice greatly affects the finished sake. In addition, koji rice accounts for 20% of the total amount of rice used for sake.
