Sarashina soba is a generic term for thick, dark-colored soba noodles with a wild flavor. It is often compared to Sarashina soba, which is white, thin, and delicate in flavor, and is the exact opposite of Sarashina soba. It is sometimes called “Yamaga soba” in reference to its regional counterpart in Edo (Tokyo).
Rural soba is made from buckwheat flour milled with the buckwheat hulls still attached. While this allows the buckwheat aroma and flavor to be fully appreciated, the buckwheat flour is ground with the buckwheat hulls still attached, which sometimes gives the buckwheat a strong “eggy” taste.
